A freshly picked tomato, warmed by the sun.... for me it is the essence of summer. Throw in peppers, cucumber and fragrant herbs and there is no excuse not to knock up a glorious gazpacho. For inspiration look no further than the beautiful Bella at Simpkin and Roses, who hits the mark this effortless chilled summer soup.

Bella's Ultimate Gazpacho recipe:

12 really ripe tomatoes
1/2 cucumber
1 red pepper
2 garlic cloves
Handful of stale ciabatta or similar
Masses of extra virgin olive oil
Sherry vinegar to taste
Wiz up with some ice, optional tabasco or chilli. Sprinkle chopped cucumber, pepper and a swirl with quality olive oil.
